Yep, I have also found that if you want stuff with a coating to come out cripsy, to raise the lid a by putting a lid lifter or a tent stake (metal of course) between it and the DO so the moisture escapes, the last 15 or 20 minutes.
Anyone else ever try baking with steam. I saw an ad on Facebook for the Can Cooker and it intrigued me, so I thought I would give it a try. This method can be used to bake a cake on the stove using moist heat/steam in a double boiler. It works for cakes and quick breads. You could also use it for a main dish like meatloaf or steamed fish and vegetables.
What will you need:
- Stove with the ability to hold a pan of water at a low boil. If you are careful, you could do it on the fire.
- Set of nesting pans - the larger must have a tight fitting cover.
- A rack to raise the inner pan out of the water like a double boiler.
- Cooking spray.
- Wax paper or parchment to line the bottom of the cake pan
- Aluminum foil to cover the inner pan
Here’s how it works:
- Fire up your stove
- Place the rack in the large pan and add enough water so that it is just below the rack. Cover, put the pan on the stove, and bring the water to a boil.
- While waiting for the water to boil, mix up the batter for whatever it is that you want to bake. Spray the inside of the smaller pan with cooking spray and add the batter. (Lining the bottom with wax paper or parchment will help the cake release easier from the pan when cooked.) Cover the top tightly with aluminum foil.
- Once the water boils, reduce to a low boil and put the smaller pan on the rack inside the larger pan. Replace the cover and don’t remove for 20 to 25 minutes. You want just enough steam in the pan to cook the cake. (In this picture the frying pan is just there to hold down the cover.)
The cake is done when a toothpick inserted in the center comes out clean. Let it rest for a few minutes before releasing the sides and removing from the pan.
Due to the low cooking temperature the cake won’t brown, but it will be cooked through. This is Jiffy Mix cornbread. Came out great - just add chili! (I cracked it trying to take a picture of the bottom.)
The key is to cover the inner pan with foil to prevent water from dripping on to the cake and making it rubbery. It would work with smaller (or larger) nesting pans than i used.
Steam would be great for refreshing / reheat of rice dishes!
My best friend sent me this last night and I plan to precook the shrimp and lemon sauce and freeze it. Then I’ll bag the precooked pasta and heat the whole thing up on the JetBoil.
We have a Snow Queen fridge in the Defender and if the frozen items start to thaw they can be used 2-3 days later if you don’t open it or keep some items in a Small Yeti bag. We haven’t made ourselves sick yet
