Kayaking in Kauai
The different times we were hawaii, we saw the most kayak shops in Kauai. I was considering a kayaking and diving trip there this spring, but ended up in Belize diving instead.

Since no one mentioned it the NaPali coast is supposed to be a fantastic paddle. Kayak Kauai offers a paddle tour of it. But alas, if you are going in Thanksgiving time, you will be outside the normal window for paddling it. The northern shores are calmer in the summer time, in the winter, storms develop over the Northern Pacific and the waves that those storms generate hit the northern shores.
Alternatively Kayak Kauai offers southern shore tours in the winter months.
