I've been using this lately -- orginally bought to carry water in a jacket pocket when skiing. It has a plastic sleeve that stays under the rigging when I slip the flask out. (I don't know how well it would withstand capsizing/rolling though.)

Edit: It has a nice curve to conform to your, er, deck.

A BLADDER IN UNDERPANTS
Why not a bladder contoured to your butt that fits inside your underpants with a tube running under your shirt?

The paddler’s weight would pressurize the system making drinking like using a water fountain.

The bladder would also cushion the seat making gelpads unnecessary.
