Relax & find the answer
There’s a lot of things that can cause the kayak to veer, and almost all of them are you.
My better half complained a lot about a new boat she bought several years ago veering to one side. It was her first boat without a rudder in a long time. I took it out one day, and paddled it about 12 miles, surfed it, let it glide, etc etc etc, and came home and said “It ain’t the boat, dear. In fact, the boat responds wonderfully”.
She has a slight case of scoliosis, and from becoming dependent on a rudder for a number of years, forgot how to compensate for the fact that she’s slightly tilted to one side naturally, which caused the boat to turn. A little practice and paying attention to the cause solved the problem.
Experiment with several possible causes, and when you find the solution, make a point of practicing the fix. You’ll be fine.

Let’s see…a solid hull material, a human being, water, and air…there’s hydrodynamics and there is aerodynamics! Two good places to start. Sketch out the forces, in your opinion, that matter…then compare to others’ opinions…
