Rapidfire
I have a Rapidfire. Its light & quite fast: I really like it (see review on paddling.net). However it is 15’, considerably longer than the poster’s 12’ inquiry length.
My F1 is fine also, but 14’, not 12’.
My suggestion is a very light 14’-15’ craft. The low weight facilitates loading the longer craft.

Hypermiling - get a removable rack

I take my rack off when not in use. I kayak several times a week, when I can. Takes 30 seconds to remove or put back. Honda Insight. Use Yakima Landing Pads for the quickest system to easily install and remove.
You are tall, so you can install an extension across the bars, so you can both have a wider spread between the support points where your boat rests on the rack, as well as take and put on the whole thing in one motion. Can carry 8' long white water boat just as easily as a 21' long surf ski or a 3' wide canoe, or a pair of sea kayaks...
