If you had to choose one video or DVD on sea kayaking techniques, which one would it be? I’ve read a few books on the subject, but I think I’d get a lot more out an instructional DVD.

It depends
If you want all strokes and techniques, then you can’t go too wrong with Nigel Foster’s series, but it doesn’t all come in one DVD (pretty slow going though, I ended up watching them at 2x speed).
If you’re looking to improve your forward stroke, then Brent Reitz Forward Stroke video is very effective.
Derek Hutchinson has a good one (I only saw it once and don’t remember much of it) called Beyond the Cockpit. He includes some fun parlor tricks.
