Can you eat them ? How do you cook them?
I was somewhere in Latin America many years ago and did try iguana. So yes you can eat them. But the easy way to prepare them is to order at a restaurant.
Keep in kind that when you defrost one of these Florida ones, they come back to life.
Tastes like chicken, and the green ones are sweeter than the black ones.

Good eating in Central America. Dispatch the invasive species quickly if you find any on the ground.
