Tom Holtey and his wife Athena lived in Hawaii and know good spots for “Flatwater” paddling. There is also a regular poster there who can give you advice.
Honestly Hawaii is not that good spot in general for flatwater kayaking, you can get big winds and waves any time of the year. Kauai has a couple of trips on rivers that are decent, Kayak Kauai is the outfitter. They also take folks on the Napali Coast paddle - probably the best kayaking trip in the Islands - but it is not flatwater, but usually pretty benign in the summer. Also Kauai is much less developed than Oahu or Maui.
