I’m new to the world of kayak repair. My rope skeg is quite old and worried about rope breaking. How does one replace the old rope?

I would suggest contacting a dealer or the manufacturer to talk you through it, since they are not all the same. That’s what I did when I bought a kayak with the rope missing and had no idea how to attach it.
Take it apart and watch carefully
it’s really a simple system. My one tip is to use a vice grip to tension the bungee cord while you tie the knot in place pull the cord through the eye, clamp on the far side with the vice grips then tie the knot with ease not tension.
