Run Water over it while drilling?
Also is it possible to push the screw head out away from the hull enough to hacksaw the head of it off then push the remaining part of screw out through the inside of the hull? If this is possible you might want to place tape on the hull so the hacksaw blade doesn't overly scratch it.

But I had some issues with the 2 I owned. I dealt with the Romany issues and really liked it. Have a bit of sellers remorse. I have an old Nordkapp that is heavy, hard to turn, and the ocean cockpit makes getting in and out painful since I dislocated my shoulder but really well made and solid.
Drill
Don’t take a hacksaw blade to it, too small of an area and too close to the hull. Drill calmly and you shouldn’t have a problem.
