I’m going to be vacationing down at Nags Head in late August. Can anyone suggest a/some tours to take or outfitters to use. I will probably be taking older kids 10-12 and some complete novices. Thanks.

The book below has several options in the area. The author also has a small kayak shop in Manteo. Kitty Hawk kites also rents boats I believe. I've used KHK and Pam for shuttle services, but never rented from either.
One paddle I can recommend, especially for beginners is Kitty Hawk woods. Put in at the Dare County boat ramp. The easiest route would be to paddle north as there are no turns or forks to get confused by. We saw lots of wildlife on our visit last month. You can also go south of the ramp, but there are a few turns in the salt marsh where you'll have to pay attention or you can get turned around (ask me how I know!)
