Oil vs Spar Varnish for canoe trim

What type of oil is preferred for trim? How many coats need be applied? Does it protect from ultraviolets like spar varnish?

Using this on new cherry gunwhales.

Thanks.

Don’t worry about UV on cherry.
It will darken with UV exposure, and it will just look better. UV will not weaken the wood even though it may pass through varnish.

Notice that cotton has excellent UV resistance. Mother Nature has developed natural UV resistance in vegetable fibers, including wood.

oil
I like Watco brand oil on the gunnels of my old madriver canoe, its what the recomended when I bought it back in 1982.
