There are none in Nevada, one in Utah, but quite a few in California and Colorado. Your best bet may be to take a look at the canoeing courses to determine what level would be best for you: https://www.americancanoe.org/page/Courses_Canoeing

and then start contacting instructors in the state you prefer to travel to.
