Is there anything on the market that would boost her up a couple of inches?
The usual solution to seat fit in a kayak is gluing in some shaped minicell foam. Weldwood cement. But that is a somewhat permanent solution. Is this something that would have to come in and out of the boat depending? The seat solutions that work like that, such as Sweet Cheeks seat pads, don’t really add height.
I am guessing that you want to modify the seat that is in there, not have a full out replacement?

Someone gave me a 1” thick piece of black closed cell foam that is more flexible than a similar thickness of minicell. I sometimes sit on the floor or a hard chair with it.
I don’t know its trade name, but perhaps a supplier of industrial foams can help you.
The other thing that you could look at is generic waterproof seat cushions. There are probably some sized for kids so they can sit higher on powerboat seats.
Oh…I just thought of something better than the generic seat cushion. ThermaRest makes lightweight closed-cell thin “egg-crate” sleeping pads that fold in Z sections. I have a very old one that is holding up well for all kinds of uses—UNLIKE the open-cell foam pads. I think its name is Z-Rest? You can fold it so that the person sits on more than one panel width, and in different thicknesses. The Z-Rest would work better than standard rolled up sleeping pads because it would not keep trying to unroll.
